Cricket Pad

Ingredients

1/4 CUP
Fish Sauce

5 TBSP. Lime Juice
1 TBSP. Sugar
2 TBSP. Soy Sauce
2 TBSP. Peanut Oil
3 Eggs Lightly Beaten
3-4 Cloves Garlic
1/2 Cup Scallions
1 Cup Crickets
300g Rice Noodles
2 Cups Bean Sprouts
1/4 Cup Crushed Peanuts
1/2 Cup Cilantro
Lime Wedge

Cooking instructions

Blend together the fish sauce, soy sauce, lime juice and sugar.

Pour oil into a skillet over medium-high heat and scramble the eggs.

Remove eggs and set aside.

Add garlic and scallions and fry until they get soft.

Add the sauce mixture from step 1, the crickets and the eggs back into the skillet, and warm thoroughly.

Cook and add the rice noodles to the skillet.

Add and toss the bean sprouts.

Top with peanuts, cilantro, and garnish with a lime wedge.
